Bean and Pasta Salad

This salad is full of flavour and is sure to be a hit at any summer picnic or potluck. Check out the French Dressing recipe that goes with this salad. It is very good!
Ingredients
| Cooked kidney beans | 1 cup | |
| Cooked black beans | 1 cup | |
| Cooked chickpeas | 1 cup | |
| Cooked navy beans | 1 cup | |
| Veggie rotini (whole grain) | 2 cups | |
| Green pepper, chopped, bite sized pieces | 1 ea | |
| White onion, diced | 1/2 cup | |
| Fresh parsley, minced | 1/4 cup | |
| Fresh basil, minced | 1 Tbsp | |
| Fresh thyme, minced | 1 Tbsp | |
| French dressing | to taste |
Directions
- Cook veggie rotini according to package directions.
- If using canned beans, drain, rinse and drain again.
- In a salad bowl, combine beans, rotini, veggies, and fresh herbs.
- Add dressing to bean mixture. Stir gently.
- Cover and refrigerate for several hours to mix flavours.
Helpful Hints
- You may be able to find the beans in pre-mixed cans.
- For a quick mix option, use a pre-made French dressing instead of making your own.
- If you are making the dressing from scratch, you may wish to make extra and serve with a green salad.
- If you like parsley, increase to 3/4 cup. Make sure it is finely chopped.
- Garnish with chopped green onions just prior to serving.
