If it’s been a while since you’ve had a gluten-free treat that doesn’t crumble and tastes as good as (if not better than) wheat-based treats then you’ll want to try these fantastic fudge brownies! You will never know they are made from beans so don’t let the first ingredient dissuade you!

Yield: 16 Squares

Ingredients

Adzuki beans, cooked 360 gr. (12.7 oz)
Butter, unsalted 113 gr. (4 oz)
Chocolate 170 gr. (6 oz)
Eggs 4 ea
Sugar (blonde) 345 gr. (12 oz)
Vanilla 1 tsp

Note: You can use any mild tasting bean to make this recipe.

Directions

  1. Melt butter and chocolate together in double boiler over low heat.
  2. In food processor, purée beans until smooth.
  3. Beat eggs with mixer and balloon whisk until foamy, then gradually add sugar while mixing on high speed until eggs are pale and thick. Beat in vanilla.
  4. Stir puréed beans into melted chocolate, then add chocolate mixture to eggs, folding until smooth. Scrape into prepared 8″ x 8″ pan.
  5. Bake in center of 350 F oven until cake tester inserted in center comes out with a few moist crumbs clinging, about 45 minutes.
  6. Let cool in pan on rack.

These brownies were sold at Rainbow Foods in the mid-2000s as a take-out item. They were one of my faves at the time and luckily the bakers were willing to share the recipe with me. They found the recipe in Canadian Living magazine (they made some modifications to it). Rainbow Foods was sold to Natural Food Pantry in 2020.

The stock photo used here shows grain-free brownies. While not the exact recipe from Rainbow Foods, these they look very similar.
