Tofu Spread with Lime

This recipe came from an online vegetarian newsgroup. I had asked for a recipe that would be a dairy-free substitute for cream cheese. While this doesn’t match the taste of real cream cheese, it has a nice flavour and texture. Use it on bread, baked potatoes or as a veggie dip. Mori-Nu is an excellent brand of silken tofu for this type of recipe. You can vary the firmness of the tofu depending on the desired consistency of the final product.

Ingredients

Silken tofu (firm or extra firm) 12 oz
Caraway seeds 1/8 tsp
Dill, dried 1/4 tsp
Lime juice, freshly squeezed from 3 limes
Water 2 Tbsp
Oil (optional) 1 tsp

Directions

Place all ingredients in blender and blend until creamy.

Variation

For a zesty tofu spread use 1/2 tsp salt, a pinch of cayenne pepper and the juice of 3 small lemons in place of the caraway seeds, dill and lime juice.
