Pumpkin Sesame Green Beans
About
This recipe adds a festive flair to ordinary green beans. Great for holiday entertaining!
The above Shutterstock photo shows a similar recipe but without the pumpkin seeds.
Adding pumpkin seeds will boost protein, healthy fats and other vitamins and minerals in this dish.
Ingredients
Green beans, trimmed | 4 cups | |
Olive oil | 2 Tbsp | |
Pumpkin seeds (pepitas) | 1/4 cup | |
Sesame seeds | to taste | |
Garlic, minced | 2 cloves | |
Rosemary, crushed, dried (or fresh) | 1/2 tsp (or 1 tsp fresh) | |
Salt | Pinch - to taste | |
Pepper | Pinch - to taste |
Directions
- Steam or boil beans in salted water until just tender.
- In a skillet, heat oil and add pumpkin seeds; cook until brown, about five minutes.
- Add sesame seeds, garlic and rosemary; cook for two minutes.
- Add green beans; cook until heated through, about three minutes.
- Season with salt and pepper and serve.
