Twice Baked Cauliflower
About
This delicious Instant Pot recipe tastes similar to twice baked potatoes. The low carb and high fat content make it suitable for a Keto-friendly meal. It’s great for entertaining and even those not eating Keto will love it. If you don’t have an Instant Pot you can still make this recipe using a regular electric steamer or the kind that fits inside a pot on the stove. Makes 18 servings.
Ingredients
Caluliflower | 5.63 lbs | |
Melted butter | 2 Tbsp | |
Sliced green onions | 4.5 Tbsp | |
Sliced cooked bacon, divided | 1 cup | |
Shredded Cheddar cheese, divided | 4.5 cups | |
Sour cream | 2.25 cups | |
Cream cheese (optional) | 4.5 Tbsp |
Directions
- Steam cauliflower in Instant Pot pot for 5 – 7 minutes depending on desired texture. Use more time for a creamier result. Perform a quick release on your Instant Pot.
- Place cauliflower into a large bowl and add melted butter, green onions, 1/4 cup of the bacon and one cup of the cheddar cheese. Add sour cream and cream cheese (if using). Mix with a hand blender until smooth.
- Place in a 2-quart casserole dish and top with remaining bacon and cheese.
- Bake for 20 – 25 minutes at 350 degrees F.
Editor’s Notes
- The original recipe called for 4.5 tablespoons of butter but only gave directions to use 2 tablespoons. So I only put 2 tablespoons in the ingredients.
- The bacon was originally listed as 1.13 cups. This is approximately 1 cup plus 2 Tablespoons but for the sake of simplicity I reduced it to 1 cup.
