Applesauce Raisin Cookies

These cookies have a nice texture and an excellent flavour. Great for school lunches and fall snacks.

Yield: 24 cookies

Ingredients

Vegetable oil 1/4 cup
Honey 1/2 cup
Egg 1 ea
Vanilla Extract 1 tsp
Unsweetened applesauce 1/2 cup
Whole wheat flour 1/2 cup
Unbleached white flour 1/2 cup
Baking Powder 2 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Ground cinnamon 1 tsp
Ground Cloves 1/8 tsp
Rolled oats 1/2 cup
Raisins, dark or golden 1/2 cup

Directions

  1. Cream the oil and sugar together.
  2. Add the egg and beat until light.
  3. Blend in the vanilla and applesauce.
  4. Stir the flours, baking powder, baking soda, salt, cinnamon, cloves, oats and raisins into the creamed mixture. Blend well.
  5. Drop by teaspoonfuls onto lightly-oiled baking sheets.
  6. Bake in a 375-degree oven for 10 minutes.
  7. Cool on a wire rack.
