Applesauce Raisin Cookies

These cookies have a nice texture and an excellent flavour. Great for school lunches and fall snacks.
Yield: 24 cookies
Ingredients
Vegetable oil | 1/4 cup | |
Honey | 1/2 cup | |
Egg | 1 ea | |
Vanilla Extract | 1 tsp | |
Unsweetened applesauce | 1/2 cup | |
Whole wheat flour | 1/2 cup | |
Unbleached white flour | 1/2 cup | |
Baking Powder | 2 tsp | |
Baking soda | 1/2 tsp | |
Salt | 1/2 tsp | |
Ground cinnamon | 1 tsp | |
Ground Cloves | 1/8 tsp | |
Rolled oats | 1/2 cup | |
Raisins, dark or golden | 1/2 cup |
Directions
- Cream the oil and sugar together.
- Add the egg and beat until light.
- Blend in the vanilla and applesauce.
- Stir the flours, baking powder, baking soda, salt, cinnamon, cloves, oats and raisins into the creamed mixture. Blend well.
- Drop by teaspoonfuls onto lightly-oiled baking sheets.
- Bake in a 375-degree oven for 10 minutes.
- Cool on a wire rack.
