Fennel Citrus Salad

Years ago this delicious salad was a take-out item at Rainbow Foods in Ottawa (now sold to Natural Food Pantry). It’s very easy to make at home. The fennel blends well with the sweet citrus fruits resulting in a unique flavour. The baby spinach adds the extra nutrition of a green vegetable but this can be omitted or substituted with diced cucumber if you are avoiding foods high in oxalate.
Ingredients
Fennel, chopped | ||
Oranges, chopped | ||
Pink Grapefruit, chopped | ||
Blood Oranges, chopped | ||
Baby spinach, chopped | ||
Sweet brown rice vinegar (dash) |
Directions
All ingredients are to taste. Mix and serve.
Helpful Hints & Notes
This recipe is labelled as suitable for both a raw food diet and an animal-based diet (meat and fruit).
Raw food folks: please note that you can substitute a vinegar of your choice if you cannot find brown rice vinegar that is raw.
Animal-based folks: you can use apple cider vinegar, white rice vinegar or lemon juice in place of brown rice vinegar. Please note that the fennel bulb is the fruit part of the fennel plant. Cucumber is also (botanically) a fruit.
