Fruit & Nut Balls

These yummy and healthy treats are great for school lunches or an afternoon snack.

Ingredients

Dates, pitted 1/2 cup
Raisins, dark or golden 1/2 cup
Cocoa -or- carob powder 2 Tbsp
Honey 2 Tbsp
Walnuts 1/2 cup
Sunflower seeds 1/2 cup

Additional ingredients: extra walnuts, ground; OR shredded coconut, unsweetened.

Directions

  1. Grind together dates, raisins, cocoa (or carob) powder, honey, walnuts and sunflower seeds in a food processor.
  2. Press the mixture into 24 small balls.
  3. Roll in the ground nuts or shredded coconut. Store in an airtight container.
