Nut Muffins
About
These muffins are made from ground nuts. Suitable for a gluten-free or grain-free diet. You can enjoy these muffins as-is or add a little spice such as cinnamon or ginger.
Ingredients
Ground nuts | 2 1/2 cups | |
Honey | 1/2 cup | |
Baking soda | 1/2 tsp | |
Salt | 1/8 tsp | |
Eggs | 3 ea |
**1/4 c melted butter OR 1/2 c homemade yogurt OR a small amount of fruit juice or apple sauce depending on consistency of batter
Directions
- Preheat oven to 375 F.
- After grinding nuts, leave in food processor. Add other ingredients and process.
- Add ** ingredient last depending on consistency.
- Spoon into greased muffin tins and bake 15-20 minutes.
