Spelt Crackers
About
This recipe has just six simple ingredients and makes a yummy, crispy cracker!
Yield: 6 to 7 dozen
Ingredients
Spelt flour | 2 cups | |
Salt | 1/2 tsp | |
Baking soda | 1/2 tsp | |
Unbuffered vitamin C crystals | 1/4 tsp | |
Oil | 1/4 cup | |
Water | 1/2 cup |
Directions
- Mix together the flour, salt, baking soda and vitamin C crystals.
- Add the oil and stir until it is thoroughly mixed in to form small crumbs.
- Add water 2 tablespoons at a time, mixing well after each addition. Knead dough on a lightly floured board 1 – 2 minutes.
- Divide dough in half and roll each half out on an oiled baking sheet with an oiled rolling pin to about a 10 x 14 inch rectangle. The dough should be very thin – about 1/16 to 1/8 inch thick.
- Cut dough into 2-inch squares and prick each three times with a fork. Sprinkle with additional salt if desired.
- Bake at 350 degrees for 10 – 14 minutes or until golden brown and crisp.
Helpful Hints
- When adding the water, watch the consistency of the batter. You may find you don’t need the last one or two tablespoons.
- Consider sprinkling a few sesame seeds on top of the crackers before baking. Roll them in slightly with the rolling pin.
- At the end of 10 minutes remove baking sheet from oven and lift the irregularly shaped crackers around the outer edge to a wire rack. Separate remaining crackers and return them to the oven for another 3 – 4 minutes to crisp.
