Spelt Crackers

This recipe has just six simple ingredients and makes a yummy, crispy cracker!

Yield: 6 to 7 dozen

Ingredients

Spelt flour 2 cups
Salt 1/2 tsp
Baking soda 1/2 tsp
Unbuffered vitamin C crystals 1/4 tsp
Oil 1/4 cup
Water 1/2 cup

Directions

  1. Mix together the flour, salt, baking soda and vitamin C crystals.
  2. Add the oil and stir until it is thoroughly mixed in to form small crumbs.
  3. Add water 2 tablespoons at a time, mixing well after each addition. Knead dough on a lightly floured board 1 – 2 minutes.
  4. Divide dough in half and roll each half out on an oiled baking sheet with an oiled rolling pin to about a 10 x 14 inch rectangle. The dough should be very thin – about 1/16 to 1/8 inch thick.
  5. Cut dough into 2-inch squares and prick each three times with a fork. Sprinkle with additional salt if desired.
  6. Bake at 350 degrees for 10 – 14 minutes or until golden brown and crisp.

Helpful Hints

  1. When adding the water, watch the consistency of the batter. You may find you don’t need the last one or two tablespoons.
  2. Consider sprinkling a few sesame seeds on top of the crackers before baking. Roll them in slightly with the rolling pin.
  3. At the end of 10 minutes remove baking sheet from oven and lift the irregularly shaped crackers around the outer edge to a wire rack. Separate remaining crackers and return them to the oven for another 3 – 4 minutes to crisp.
