Millet Carob Chip Cookies

This recipe makes a tasty, moist drop cookie.

Ingredients

Millet flour 1/2 cup
Barley flour 1/2 cup
Instant oatmeal 1/4 cup
Non-alum baking powder 2 tsp
Salt 1/2 tsp
Finely chopped nuts (optional) 2 Tbsp
Sunflower oil 4 Tbsp
Honey (or agave or maple syrup) 4 Tbsp
Soy milk 1/4 cup
Carob chips 1/2 cup

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients together.
  3. Stir liquid ingredients together until honey dissolves.
  4. Stir liquid and dry mixtures just until evenly mixed.
  5. Fold in carob chips.
  6. Drop by teaspoonfuls onto oiled cookie sheet.
  7. Bake 15 minutes at 350 F. Cool.
