Want to add interest to the everyday peanut butter sandwich? Try these five variations. They are great fillings to take to work or school. For each variation, mix all ingredients, keep chilled and spread on nutritious bread.

Nutty Figgy Sandwich

Peanut butter 2 Tbsp
Sesame tahini 2 Tbsp
Sunflower seeds 1 Tbsp
Figs, chopped 2 ea

 

Celery

Double Peanut Salad Sandwich

Peanut butter 2 Tbsp
Celery, chopped 1/4 cup
Yogurt 2 Tbsp
Chopped peanuts 2 Tbsp

 

Single banana

Vanilla P.B. & Banana Sandwich

Peanut butter 2 Tbsp
Banana, mashed 1/2 ea
Non-fat milk powder 2 Tbsp
Vanilla 1/2 tsp

 

Cucumber slices

Peanut Veggie Sandwich

Peanut butter 2 Tbsp
Alfalfa sprouts 1/4 cup
Sesame seeds 1 Tbsp
Cucumber slices 8 - 10
Mayonnaise 1 tsp

 

Lemon

Tangy Tofu P.B. Sandwich

Tofu, mashed 8 oz
Peanut butter 1/4 cup
Banana 1 ea
Lemon juice 1 tsp

 

Editors Notes

  1. The tangy tofu variation seems a bit much for just  two sandwiches. You may be able to get make more with that one.
  2. This recipe originally had eight variations but the software I am using only allows for five ingredients lists per page. I included what I thought were the most interesting combinations. The other three were mixtures of:  peanut butter & grated cheese; peanut butter with raisins & apple and peanut butter with tahini, raisins & non-fat milk powder.
