Apricot Quick Bread

About

A nice snack bread made with spelt flour, apricots, walnuts and a hint of ginger. Adapted from the The Garden Way Bread Book (#ad).

Yield: 1 loaf

Ingredients

Dried apricots 1 cup
Boiling water as needed
Egg 1 ea
Honey 2/3 cup
Melted butter or oil 2 Tbsp
Apricot nectar OR frozen concentrated orange juice 1 cup
Vanilla 1 tsp
Chopped nuts 1/2 cup
Spelt flour 2 cups
Baking powder 2 tsp
Soda 1 tsp
Salt 1 tsp
Ginger 1/4 tsp

Directions

  1. Preheat oven to 350 F. Pour boiling water over apricots and let steep about 10 minutes. Drain and chop apricots.
  2. Beat egg until light and slightly thick. Add honey, oil, juice and vanilla. Add apricots and nuts.
  3. Mix flour, baking powder, soda, salt and ginger. Fold flour mixture into liquid.
  4. Pour into greased pan and bake about one hour.
  5. Cool on rack 10 – 15 minutes before removing from pan.
