This recipe was found on Usenet and published on our original site in 1999. That was our first year publishing the site and while I was testing some of the recipes, some were evaluated only on “virtual” paper. The date log cookies were one of those. One day about seven years later, I received the following e-mail:
“My mother made these for Christmas when I was a little girl. They are addictive and absolutely yummy. She made them for the family dinner as well as to give as gifts for neighbors and church members. I didn’t know if I would be able to find the same recipe again, hers was lost after she passed away, and I am so glad you have it. Thank you.” Tammy G. – Tennessee, U.S.A.

Yield: 2 dozen
Ingredients
Butter | 4 Tbsp | |
Sugar | 1 cup | |
Dates (chopped) | 1 cup | |
Eggs | 2 ea | |
Nuts | 1 cup | |
Crispy rice cereal | 2 cups | |
Shredded coconut | 1 large pkg. |
Directions
- Mix butter, sugar, dates and eggs; boil 4 or 5 minutes.
- Let cool; add nuts and crispy rice cereal.
- Shape in logs and roll in coconut.
