Easy Miso Soup

The ingredients for this simple, flavourful soup are easy to pack for a camping trip. Try it when time is short but you need something filling – like when you are setting up the tent at sunset and you are hungry! Makes two servings.

Miso is a fermented soy bean and grain paste that is nutritious and easy to digest. You can buy the paste ready-to-go at health food stores, asian food stores and some grocery stores. To learn more about miso, please visit Japanese Food 101.

Ingredients

Water 2 1/2 cups
Veggie broth cube 1 ea
Dried vegetable flakes 1/4 cup
Freeze dried chives 2 Tbsp
Garlic powder 1/4 tsp
Ginger powder 1/4 tsp
Soy sauce (wheat or gluten-free if needed)* 1 tsp
Rice vermicelli handful
Miso 2 Tbsp

Directions

  1. Add all ingredients except the vermicelli and miso to a pot and bring to a boil.
  2. Reduce to a simmer until vegetable flakes have softened. Add vermicelli. Simmer two minutes, then remove from heat.
  3. Take out 1/2 cup of broth, mix the miso into it and then add back to the soup.
  4. Serve.
