Fagioli al Tonno

This salad is an Italian dish that literally translates to “Tuna Beans” It’s packed with protein and easy to make. Great for lunch or supper on a hot day. I added the leafy greens to this recipe for more vegetable content and the pepper for more zip. Other veggies that would go nicely and add a bit more colour include sliced red onion, halved cherry tomatoes and diced red pepper.
Yield: 2 Servings
Ingredients
Tuna fish, drained and flaked | 1 can | |
White beans, drained and rinsed | 1 can | |
Chopped celery | to taste | |
Lemon juice or vinegar | to taste | |
Olive oil | to taste | |
Leafy greens | to taste | |
Fresh ground pepper (optional) | to taste |
Directions
- Combine tuna, beans and celery.
- Add lemon juice or vinegar and olive oil.
- Serve on leafy greens.
- Add a dash of fresh ground pepper to each plate if desired.
