This salad is an Italian dish that literally translates to “Tuna Beans” It’s packed with protein and easy to make. Great for lunch or supper on a hot day. I added the leafy greens to this recipe for more vegetable content and the pepper for more zip. Other veggies that would go nicely and add a bit more colour include sliced red onion, halved cherry tomatoes and diced red pepper.

Yield: 2 Servings

Ingredients

Tuna fish, drained and flaked 1 can
White beans, drained and rinsed 1 can
Chopped celery to taste
Lemon juice or vinegar to taste
Olive oil to taste
Leafy greens to taste
Fresh ground pepper (optional) to taste

Directions

  1. Combine tuna, beans and celery.
  2. Add lemon juice or vinegar and olive oil.
  3. Serve on leafy greens.
  4. Add a dash of fresh ground pepper to each plate if desired.
