Gluten-Free Sponge Cake

An easy-to-make dessert suitable for those on a gluten-free or grain-free diet. Can be topped with whipped cream and fruit.

Ingredients

Eggs, separated 4 ea
Lemon juice 1 Tbsp
Potato starch flour 1 cup
Honey 1 cup
Salt 1/2 tsp

Directions

  1. Beat egg yolks till thick.
  2. Blend in salt, lemon juice and honey. Then blend in flour.
  3. Beat egg whites stiff. Mix flour mixture with egg whites.
  4. Oil a 9″ tube pan. Pour in batter and bake at 350 F. for 20 minutes, then raise to 400 F. and bake 20 minutes longer.

  • I tagged this recipe as Paleo Friendly . . . but it may have too much honey for some folks following that diet. Consider alternatives such as stevia. Applesauce could also be added to maintain the proper dry to liquid ratio.
