Granny Smith Buckwheat Muffins
About
This muffin recipe is chock full of flavour with buckwheat flour, raisins, cinnamon and Granny Smith apples.
Yield: 16 muffins
Ingredients
Granny Smith apples, peeled & diced (1/4 inch) | 2 ea | |
Honey | 1 cup | |
Egg, beaten lightly | 1 ea large | |
Oil | 1/2 cup | |
Vanilla extract | 1 tsp | |
Buckwheat flour, light or whole | 1 cup | |
Spelt or whole wheat flour | 1 cup | |
Cinnamon | 2 tsp | |
Baking soda | 2 tsp | |
Salt | 1 tsp | |
Raisins | 1 cup | |
Walnuts, coarsely chopped | 1 cup |
Directions
- Toss together apples and honey in large bowl.
- Whisk or beat together egg, oil and vanilla.
- Combine buckwheat flour, spelt or whole wheat flour, baking soda, cinnamon and salt.
- Stir egg mixture into apple mixture.
- Add flour mixture and stir just enough to combine (batter will be stiff). Stir in raisins and walnuts.
- Divide batter among 16 to 18 well greased muffin cups.
- Bake in middle of 325 degree oven for 20 minutes or until done.
- Serve warm or cold.
