Granny Smith Buckwheat Muffins

This muffin recipe is chock full of flavour with buckwheat flour, raisins, cinnamon and Granny Smith apples.

Yield: 16 muffins

Ingredients

Granny Smith apples, peeled & diced (1/4 inch) 2 ea
Honey 1 cup
Egg, beaten lightly 1 ea large
Oil 1/2 cup
Vanilla extract 1 tsp
Buckwheat flour, light or whole 1 cup
Spelt or whole wheat flour 1 cup
Cinnamon 2 tsp
Baking soda 2 tsp
Salt 1 tsp
Raisins 1 cup
Walnuts, coarsely chopped 1 cup

Directions

  1. Toss together apples and honey in large bowl.
  2. Whisk or beat together egg, oil and vanilla.
  3. Combine buckwheat flour, spelt or whole wheat flour, baking soda, cinnamon and salt.
  4. Stir egg mixture into apple mixture.
  5. Add flour mixture and stir just enough to combine (batter will be stiff). Stir in raisins and walnuts.
  6. Divide batter among 16 to 18 well greased muffin cups.
  7. Bake in middle of 325 degree oven for 20 minutes or until done.
  8. Serve warm or cold.
