Harvest Croutons

If you find store-bought croutons too hard and bland, try this easy home-made version. I found it in Chatelaine magazine a long time ago. Try them on your next caesar salad!

Ingredients

Italian bread, unsliced 1/2 loaf
Olive oil 2 Tbsp
Garlic clove, crushed 1 ea
Dried basil 1/2 tsp
Dried leaf oregano 1/2 tsp
Salt 1/4 tsp
Cayenne pepper 1 pinch
Grated parmesan 1/4 cup

Directions

  1. Preheat oven to 375 degrees.
  2. Remove crusts from bread and discard (OR you can make them into bread crumbs). Slice bread into 1-inch cubes.
  3. In a bowl, stir oil with garlic. Add bread and toss until coated.
  4. Mix seasonings together. Sprinkle over bread and stir.
  5. Spread out, in a single layer, on a baking sheet and bake for 20 minutes, stirring occasionally.
  6. Toss croutons with parmesan and sprinkle over salad.
  7. Store extra croutons in a sealed plastic bag at room temperature.
