Pasta Apple Salad

Quick, easy and yummy! Makes four servings.

Ingredients

Cooked macaroni or other small pasta 2 cups
Apple, cored and diced 1 ea
Celery, chopped 1 stalk
Raisins (optional) 2 Tbsp
Unsalted peanuts, chopped (optional) 6 whole
Plain, low-fat yogurt 1/2 cup
Ginger 1/8 tsp or to taste

Directions

  1. In a bowl, combine macaroni, apple, celery, raisins and peanuts (if using).
  2. Add yogurt and stir until coated; sprinkle with ginger to taste.

Helpful Hints

  1. To make it wheat-free or gluten-free use pasta made from appropriate grains. Gluten-free options include brown rice, quinoa, corn and bean derived noodles. Spelt and Kamut are not gluten-free but can be used by some with wheat intolerances.
  2. Dip Apple pieces in lemon juice to keep them from turning brown.
