Quick Quiche

A quick and easy gluten-free brunch idea that uses up leftover veggies and meat. Serves four.

Ingredients
Veggies ( carrots, broccoli, asparagus or leftovers) | 1 cup | |
Cheddar cheese | 1 1/2 cups | |
Onion | 1/4 cup | |
Ham or leftover meat | 3 slices | |
Milk, 2% | 2 cups | |
Eggs, | 4 ea | |
Potato or rice flour | 1/2 cup | |
Baking powder | 1 tsp | |
Salt | 1/2 tsp | |
Pepper | pinch |
Directions
- Combine veggies, cheese, onion and meat in food processor and grind.
- Put this in bottom of a large pie plate.
- Combine milk, eggs, flour, salt, pepper and baking powder.ย Blend for 1 minute.ย Pour over veggies.
- Bake at 325 degrees for 45 minutes. Let stand 5 minutes and serve.

This recipe can easily be adapted for lacto-ovo vegetarians. You can substitute extra veggies for the meat or use vegetarian meat analogues such as those by Yves Veggie Cuisine.
