Quick Quiche

A quick and easy gluten-free brunch idea that uses up leftover veggies and meat. Serves four.

Ingredients

Veggies ( carrots, broccoli, asparagus or leftovers) 1 cup
Cheddar cheese 1 1/2 cups
Onion 1/4 cup
Ham or leftover meat 3 slices
Milk, 2% 2 cups
Eggs, 4 ea
Potato or rice flour 1/2 cup
Baking powder 1 tsp
Salt 1/2 tsp
Pepper pinch

Directions

  1. Combine veggies, cheese, onion and meat in food processor and grind.
  2. Put this in bottom of a large pie plate.
  3. Combine milk, eggs, flour, salt, pepper and baking powder. Blend for 1 minute. Pour over veggies.
  4. Bake at 325 degrees for 45 minutes. Let stand 5 minutes and serve.
