Spelt Honey Cake

A basic spelt cake with three delicious flavouring options.Β The torte version tastes great with apples and even better with plums! Yield: 8 – 12 servings
Ingredients
Spelt flour | 1 1/2 cups | |
Oil | 1/2 cup | |
Honey | 3/4 cup | |
Baking soda | 1 1/2 tsp | |
Salt | 1/2 tsp | |
Soy milk | 3/4 cup |
Directions
- Preheat oven to 350 F.
- Mix dry and liquid ingredients separately.
- Add liquid to dry and mix well.
- Bake for 35 – 40 minutes in greased pan.
Flavouring Suggestions:
Sweet and Light Lemon Cake: Replace 2 tablespoons of the soy milk with lemon juice.
Orange Cake: Use 3/4 cup orange juice instead of soy milk and cut back slightly on the sweetener.
Torte: Cut 1 or 2 apples into slices and lay them on top. Sprinkle with cinnamon and/or sugar if desired. Plums may used instead of apples (use about 10 and cut in half). Be sure to make this in a large round pan for the right look.
