Spelt Honey Cake

A basic spelt cake with three delicious flavouring options. The torte version tastes great with apples and even better with plums! Yield: 8 – 12 servings

Ingredients

Spelt flour 1 1/2 cups
Oil 1/2 cup
Honey 3/4 cup
Baking soda 1 1/2 tsp
Salt 1/2 tsp
Soy milk 3/4 cup

Directions

  1. Preheat oven to 350 F.
  2. Mix dry and liquid ingredients separately.
  3. Add liquid to dry and mix well.
  4. Bake for 35 – 40 minutes in greased pan.

Flavouring Suggestions:

Sweet and Light Lemon Cake: Replace 2 tablespoons of the soy milk with lemon juice.

Orange Cake: Use 3/4 cup orange juice instead of soy milk and cut back slightly on the sweetener.

Torte: Cut 1 or 2 apples into slices and lay them on top. Sprinkle with cinnamon and/or sugar if desired. Plums may used instead of apples (use about 10 and cut in half). Be sure to make this in a large round pan for the right look.
