Bread Machine Dough Setting

This is a recipe I tried a long time ago when I was experimenting with bread machine baking. I found that wheat-free baking was a challenge with my bread machine and I’m sure the upright orientation did not help with getting it to rise. I found that my bread machine did not even do well with regular wheat flour. I needed to use a special high gluten flour.
However, I did find that using the dough setting and baking lower gluten breads in the oven worked fairly well. Although it was a bit more work, it was still easier and much less time consuming than traditional bread baking.
Ingredients
Soymilk | 1 1/8 cups | |
Canola oil | 1Β 1/2 Tbsp | |
Molasses | 3 Tbsp | |
Salt | 1 tsp | |
Spelt flour | 3 cups | |
Xanthan gum | 2 tsp | |
Yeast | 3 tsp |
Directions
- Place ingredients into bread machine in the order specified for your model. Set machine on dough setting.
- When machine is done, remove dough and place on a lightly floured board.Β Knead a few times and shape to fit in an 8 x 4-inch pan.Β Lightly grease the pan and place loaf in it.
- Set aside to rise until nearly double, about 45 minutes.
- Bake at 375 degrees for 40 to 45 minutes.Β Check after first 15 minutes of baking.Β If top is getting too brown, cover with tin foil for the remainder of the baking.
- When done, remove loaf from pan and allow to cool before wrapping.
Ideas to update
Nutritional thought changes over time. I tried this recipe over 20 years ago. I am currently moving toward a more Paleo style of eating, so bread isn’t the staple in my home that it used to be. However, if I were to make it again, I would swap the soymilk for regular milk or a different dairy-free option such as almond or coconut milk. I would also use slightly warmed butter or coconut oil instead of canola oil.
