Sugar-Free Lemon Slushies

These slushies are made using a Vitamix, though a Blendtec would probably work just as well. They have a nice tart-sweet flavour (without using sugar) and are very refreshing on a hot summer day. You can experiment with this recipe using combinations of lemons, limes and tangerines. Makes two large servings.

Ingredients

Lemons, peeled 4 ea
Water 1 cup
Stevia extract powder 1/4 tsp
Ice 2 cups

Directions

  1. Place all ingredients into Vitamix in order listed. Secure lid and insert tamper.
  2. Starting at low, walk speed up to high and blend using tamper to push ice into blades. Blend until mixture forms a thick slurry.
  3. Spoon out into tall glasses. Sip slowly with a straw.

Helpful Hints

  1. There is an easier way to peel citrus fruits than the method shown in the Vitamix cookbook. Simply cut the fruit in half from top to bottom. Cut the halves into quarters. The peels should then come off fairly easily using fingers. This is the method of peeling used in some Vitamix show demonstrations. Hold the pieces over the Vitamix container to catch any juices.
  2. An easy way to measure ice: Fill a measuring cup to the one-cup level. Pour into ice cube tray to see how many cubes equal one cup.
  3. This is an old recipe that is suitable for the newly popular Animal-Based Diet (meat and fruit). If you are following this diet you may wish to replace the stevia with honey to taste.
