Tofu Chocolate Pudding

Very good and cost effective. I’m never buying soy pudding again. This recipe makes about three times more than you get in packages and it’s so simple. No extra ingredients – unless you want to add something. . . I’m thinking maybe coconut sprinkled on top.
I chose to make this a vegan recipe so used maple syrup instead of honey. . . it took a couple extra tablespoons to make it sweet enough. Mmmmm!”

Ingredients
Silken tofu (firm) | 2 pkg | |
Unsweetened cocoa powder | 1/2 cup | |
Honey | 5 Tbsp | |
Vanilla | 1 tsp |
Directions
- Shove everything in a blender and go nuts.
- Chill for about 3 hours.
Editor’s Note
This recipe lists “packages” as an amount for tofu which can vary by brand. A popular brand called Mori-Nu makes firm silken tofu in a 349 g / 12.3 oz size. Consider tasting and adjusting flavours (if needed) before serving.
