Tofu Whipped Cream

This recipe came from the kitchen of Lorraine Picot, a holistic registered nutritional consultant. Serve as an icing over sweet breads or as a topping over fresh fruit. Goes great with Lorraine’s carrot cake recipe.

Ingredients

Tahini OR ground cashew nuts 1/2 cup
Vanilla 1 tsp
Soft tofu, crumbled 4 oz (1/2 block)
Apple or pear juice 2 - 4 Tbsp
Honey * 2 Tbsp

Directions

  1. In a blender or food processor, blend all ingredients until smooth and creamy.
  2. Serve as an icing over sweet breads or as a topping over fresh fruit.

Note

* To make this a vegan recipe you can use agave nectar or brown rice syrup in place of the honey.
