Tofu Whipped Cream

This recipe came from the kitchen of Lorraine Picot, a holistic registered nutritional consultant. Serve as an icing over sweet breads or as a topping over fresh fruit. Goes great with Lorraine’s carrot cake recipe.
Ingredients
Tahini OR ground cashew nuts | 1/2 cup | |
Vanilla | 1 tsp | |
Soft tofu, crumbled | 4 oz (1/2 block) | |
Apple or pear juice | 2 - 4 Tbsp | |
Honey * | 2 Tbsp |
Directions
- In a blender or food processor, blend all ingredients until smooth and creamy.
- Serve as an icing over sweet breads or as a topping over fresh fruit.
Note
* To make this a vegan recipe you can use agave nectar or brown rice syrup in place of the honey.
