Warm Pumpkin Smoothie
About
A warm, comforting beverage that is smooth, hearty, creamy and slightly spicy. Perfect to start a cool morning or to warm up after being outdoors. One of my favourite recipes! Although it calls for canned pumpkin, you can also use fresh pumpkin that has been baked and puréed. Makes two servings.
Ingredients
Canned pumpkin | 1 cup | |
Fresh banana | 1 ea | |
Coconut milk, regular or low fat as desired | 1 can (160 ml) | |
Dates, pitted | 6 ea | |
Cinnamon | 1/2 tsp | |
Dried ginger | 1/4 tsp (or to taste) | |
Cloves, ground | dash | |
Nutmeg | pinch | |
Steaming hot water | 2 cups |
Directions
- Blend all ingredients in a non-glass blender until smooth.
- Garnish if desired and serve.
Helpful Hints
- Use only non-glass blender containers designed for warm liquids such as those made by Vitamix. DO NOT try this in a glass blender as it could explode and cause serious injuries.
- If using a Vitamix you can opt to blend the mixture for 5 – 6 minutes which will warm the ingredients via friction. This is the standard method for making soups in this machine so it should work for warm smoothies too.
- This recipe was tested with the products shown below with one slight difference. I used the low fat coconut milk because I prefer the consistency of it. However, you may differ from me and prefer the full fat version.
- If you are following an animal-based diet (meat and fruit) you may wish to change up the spices. There doesn’t seem to be a consensus within the community about which spices are OK and how much. Some say small amounts of most spices aren’t a problem. Some say ceylon cinnamon is preferable to cassia cinnamon. Some avoid certain spices while others use none at all. So my advice is to alter this recipe according to your own needs and / or preferences.
