Apple Corn Johnny Cake
About
A very good breakfast idea without gluten or dairy. Serve warm with maple syrup or as a quick bread with soup or salad.
Ingredients
| Corn flour | 1 cup | |
| White rice flour | 3/4 cup | |
| Baking soda | 2 tsp | |
| Salt | 1/2 tsp | |
| Honey | 1/4 cup | |
| Eggs, separated | 2 ea | |
| Oil | 2 Tbsp | |
| Applesauce | 1 3/4 cup |
Directions
- In a large mixing bowl combine corn flour, rice flour, baking powder and salt.
- Beat egg whites until stiff.
- To the dry ingredients, add egg yolks, oil, applesauce and honey. Stir well. Fold in egg whites.
- Pour batter into greased 8×8 inch baking pan (or prepared muffin pan).
- Bake for 15 minutes @ 400 F.
