Buckwheat Buttermilk Pancakes

This VERY GOOD pancake recipe is a little different in that yeast is used as a leavener and it needs to sit overnight before baking on a hot griddle. It is also a wheat-free recipe using buckwheat, barley and spelt flours. Makes 12 pancakes.

Ingredients

Dry yeast 1 tsp
Buttermilk 1 1/4 to 1 1/2 cups
Buckwheat flour 1 cup
Barley flour 1/2 cup
Spelt flour 3 Tbsp
Lukewarm water 1 cup
Salt 1/2 tsp

Directions

  1. Dissolve dry yeast into lukewarm water.
  2. Add buttermilk (use 1 1/4 cups or up to 1 1/2 cups depending on desired consistency).
  3. Add flours, and salt, then mix well. Let set overnight. Bake the next day on a hot griddle.
