Almond Granola Bars
About
An excellent treat! Would go well in kids’ lunches. I dumped the mixture onto my baking stone, covered it with plastic wrap and rolled it into a 7×9 inch rectangle with a rolling pin. Some dried fruit such as chopped raisins or dates would be a nice addition.
Yield: 16 servings
Ingredients
Rolled oats * | 1 1/2 cups | |
Oat bran * | 1/4 cup | |
Finely chopped almonds | 1/4 cup | |
Ground cinnamon | 1/2 tsp | |
Vegetable oil | 3 Tbsp | |
Honey ** | 1/3 cup | |
Vanilla extract | 1/2 tsp | |
Almond extract | 1/4 tsp |
Directions
- Preheat oven to 350 F.
- Spray a baking sheet with non-stick spray.
- Combine dry ingredients in a large bowl.
- Combine remaining ingredients and add to dry mixture. Mix until all ingredients are moistened.
- Press mixture into a rectangular shape 7 inches wide and nine inches long. (Wet hands or use one hand and a damp spoon.)
- Bake about 12 minutes.
- Remove from oven and cut into 16 bars using a sharp knife. Separate bars slightly and return to oven for 3 to 5 minutes more.
- Remove to a wire rack to cool.ย The browner the bottom of the bars, the crisper they will be when cool.
Helpful Hint
- The edges will crumble slightly when cut. Set crumbles aside for a snack.

Some specialized manufacturers are creating brands of oats that are grown and processed away from wheat and other gluten-containing grains. One brand is Only Oats. So if you are on a gluten-free diet be sure to buy a brand a special gluten-free oats.
- ** If you are on a plant-based diet and wish to avoid honey, consider trying an alternative liquid sweetener such as brown rice syrup or agave nectar.
