Fruit Salad with Chocolate Sauce

I LOVE Chocolate! What I don’t like are all the refined sugars and bad fats that often come with it. Creating and gathering healthy recipes that incorporate chocolate is one of my ongoing missions. This fruit salad is one of my creations. I came up with it simply by playing around with fruits and unsweetened chocolate squares.
You can use whatever fruits you like. The photograph shows a simple salad made with apples, oranges and bananas which I served with small glasses of freshly squeezed orange juice. Extracted orange pulp was added to the fruit sauce and pureed with mango and orange juice. This recipe would make a nice breakfast appetizer on Valentine’s Day, Easter, Mother’s Day or other special occasion. In the summer months try a berry medley!
Makes 4 servings.
Ingredients
Fresh fruit, puréed | 1 cup | |
Fresh fruit juice | as needed | |
Chocolate squares, unsweetened | 2 ea | |
Fresh fruit, chopped | Enough for 4 fruit salads |
Directions
- Arrange chopped fruit in salad bowls, reserving a few pieces for decoration.
- Place puréed fruit and chocolate squares into a small pot and gently warm on low heat until chocolate is completely melted, stirring occasionally. Avoid boiling. If you find your sauce is too thick you can thin to your preferred consistency with some freshly squeezed juice. Alternatively you could use water, coconut water or coconut milk. I haven’t tried these options but can’t see any reason why they wouldn’t be absolutely delicious!
- Pour or spoon sauce over fruit salads and add a few pieces of reserved fruit on top for decoration.
