Quinoa Salad with Dill and Lime

This salad is full of flavour and would make a very nice lunch or summer supper. It goes together fairly quickly once the quinoa is cooked. The above photo is a stock image of a similar quinoa salad.

Yield: 6 Servings

Ingredients

Cooked quinoa, room temperature or warm 2 1/2 cups
Green onions, chopped 1 bunch
Granny Smith apple, peeled, cored & diced 1 ea large
Dried currants 1/2 cup
Chopped fresh dill 1 cup
Ground coriander 1 tsp
Fresh lemon juice 1/4 cup
Freshly grated organic lemon rind 1 tsp
Olive oil 3 Tbsp
Salt and pepper to taste

Directions

  1. In a large bowl, combine the scallions, apple, dill, currants, coriander, lemon juice and rind, and olive oil.
  2. Add cooked quinoa and mix well.
  3. Taste and add salt and pepper if desired.
  4. Let stand for at least 20 minutes before serving so flavours have time to blend.

Helpful Hints

  1. Serve on a bed of alfalfa sprouts and garnish with pine nuts.
  2. Try adding blanched asparagus, diced roasted sweet peppers or pan-fried tofu to flesh this out a bit more and add more colour.
