Fish with Nut Crust

This zesty James Barber recipe is a unique take on traditional battered fish. Great for those on a gluten-free or grain-free diet.
Serves 2.
Ingredients
Oil | 2 Tbsp | |
Whitefish, Salmon, Cod or Halibut filets | 2 ea | |
Egg, beaten (egg white if diet conscious) | 1 ea | |
Chopped hazelnuts (or other kind of nut) | 1/2 cup | |
Fresh parsley, chopped | 2 Tbsp | |
Lemon, zest & juice | 1 ea |
Directions
- Heat oil at medium temperature in fry pan.
- Dredge fish in egg and sprinkle with nuts.
- Place in pan and cook for 3 minutes on each side until nuts are toasted, and fish is cooked.
- Serve with a squeeze of lemon and a sprinkle of zest & parsley on top.
