Baked Nut Loaf

This hearty vegetarian standard takes the place of roast turkey at White Cloud Inn, in the Pocono Mountains of Pennsylvania.
“I tried this one with sauteed mushrooms on the side and tomato sauce on top. It was delicious! The one thing I would change is the nuts. The loaf was a bit too crunchy. Coarsely ground instead of finely chopped nuts would have made a difference, I think.”

Yield: 6 servings
Ingredients
Chopped onion | 1/2 cup | |
Diced celery | 1/2 cup | |
Oil | 1 Tbsp | |
Nuts (walnuts and cashews), finely chopped | 1 cup | |
Cottage cheese | 1 cup | |
Salt | 1/2 tsp | |
Bread crumbs | 1 cup | |
Eggs, lightly beaten | 2 ea | |
Poultry seasoning | 1/4 tsp | |
Onion powder | 1 1/4 tsp | |
Water | 2/3 cup |
Directions
- Preheat oven to 375.
- Sauté onion and celery in oil.
- Put all ingredients into a greased 11-3/4 ” x 7-1/2″ baking dish and bake until just firm and slightly brown on top, about 35 to 40 minutes.
- Serve with you favourite sauce or gravy. The Inn uses a mushroom sauce, but the dish is also good with a tomato sauce or onion gravy.
Editor’s Notes
- This recipe can be wheat or gluten free if the appropriate type of bread crumbs are used.
- I have left the instructions for the nuts as per the original recipe, but do encourage you to follow Julie’s suggestion to coarsely grind them if you don’t like a crunchy texture.

This recipe has certainly been making the rounds! I found it years ago on Usenet. The poster there sourced The Thanksgiving Book which sourced White Cloud Inn.
