Greens ‘n More Salad

A basic salad that uses lots of different greens. Included also is a separate list of veggies you can add to change it up now and again. This recipe says it’s for two servings which seems large. If you want to serve it as a meal unto itself be sure to add some protein foods such as one or more of the following: beans / chickpeas, hemp seeds, prepared tempeh, chicken or cheese.
Ingredients
Romaine lettuce, shredded | 2 cups | |
Iceberg lettuce, shredded | 2 cups | |
Spinach or Swiss Chard, shredded | 1 cup | |
Endive, curly | 1 cup | |
Radishes, whole or sliced | 12 ea | |
Sliced cucumber | 1 ea | |
Diced celery stalks (with tops) | 2 ea |
Other ingredients you can add to make a unique combination: Boston or Bibb lettuce; red/green cabbage; kale or comfrey; chicory or sorrel; parsley, watercress and / or fresh dill; collards; beet, mustard or dandelion greens; onions; tomatoes; turnip; sprouts; sliced fresh mushrooms; sliced peppers (red/green/gold); broccoli or cauliflower florets; sliced zucchini or yellow squash; scallions or chives.
Directions
- Combine preferred vegetables.
- Toss with your favourite salad dressing.
