Harvest Cookies

These cookies are moist and have a good flavour. Not too sweet. Those wanting a sweeter cookie could add up to 1/4 cup honey. A nice cookie for the Fall season.
Yield: 36 cookies
Ingredients
Vegetable Oil | 1/3 cup | |
Egg | 1 lg | |
Cooked & mashed squash | 1 cup | |
Unbleached White Flour | 1 1/2 cups | |
Baking Powder | 1/2 tsp | |
Nutmeg | 1 tsp | |
Cinnamon | 1/2 tsp | |
Dates, finely chopped | 1 1/2 cups or to taste |
Directions
- Beat together oil, egg, and squash.
- Add flour, baking powder and spices.
- Beat well; stir in dates.
- Drop batter by small teaspoonfuls onto lightly oiled baking sheets.
- Bake at 350 degrees for 10 – 15 minutes or until firm to the touch.
- Cool on wire racks.
