These cookies are moist and have a good flavour. Not too sweet. Those wanting a sweeter cookie could add up to 1/4 cup honey. A nice cookie for the Fall season.

Yield: 36 cookies

Ingredients

Vegetable Oil 1/3 cup
Egg 1 lg
Cooked & mashed squash 1 cup
Unbleached White Flour 1 1/2 cups
Baking Powder 1/2 tsp
Nutmeg 1 tsp
Cinnamon 1/2 tsp
Dates, finely chopped 1 1/2 cups or to taste

Directions

  1. Beat together oil, egg, and squash.
  2. Add flour, baking powder and spices.
  3. Beat well; stir in dates.
  4. Drop batter by small teaspoonfuls onto lightly oiled baking sheets.
  5. Bake at 350 degrees for 10 – 15 minutes or until firm to the touch.
  6. Cool on wire racks.
