Fruit Cake Bread

A tasty holiday dessert that uses applesauce, dried fruit and orange juice concentrate instead of granulated sugar. Suitable for a plant-based diet. Makes 16 servings.

Ingredients

All purpose flour 2 cups
Cinnamon 1 tsp
Nutmeg 1 tsp
Allspice 1 tsp
Orange peel, grated 1 tsp
Mace 1/2 tsp
Baking powder 1 tsp
Baking soda 1/2 tsp
Salt 1/2 tsp
Orange juice concentrate, thawed 1 cup
Apple sauce 1/2 cup
Vegetable oil 1/3 cup
Vanilla 1 tsp
Pecans or walnuts, chopped 3/4 cup
Dried apricots, chopped 1 cup
Dates, chopped 1 cup

Directions

  1. Preheat oven to 300 F.
  2. Lightly oil a 1 1/2 quart loaf pan and set aside.
  3. Whisk together the flour, spices, peel, baking powder, soda and salt.
  4. In a in a food processor or blender, blend together the orange juice, apple sauce, oil and vanilla.
  5. Combine the wet with the dry ingredients. Stir until the mixture is just combined.
  6. Fold in the nuts and add the dried fruit. Pour batter into the loaf pan and bake until a knife inserted into the center comes out clean (about 1 1/2 hours).
  7. Cool on a wire rack.
