Avocado Spread

I love creamy spreads and am always looking for ways to make them with healthier ingredients. The consistency of this spread is similar to mayonnaise.
Ingredients
Avocado | 1 ea | |
Apple cider vinegar OR lemon juice | 2 1/2 Tbsp | |
Cold pressed oil | 2 Tbsp | |
Salt | pinch | |
Other seasonings (optional) | to taste |
Directions
- Slice open avocado and scoop out flesh.
- Blend with all remaining ingredients using a hand blender until creamy.
- Store in a sealed container in the fridge.
Helpful Hints
- If using a regular blender you may need to drizzle the oil slowly into the avocado mixture while the machine is running in order to obtain the proper consistency.
- In this recipe I used Udo’s Choice DHA oil blend. Hemp oil would be another great option. If you are on an animal-based diet use olive or avocado oil.
- I chose apple cider vinegar and added some dry mustard and a little black pepper to the recipe . . . but you can add the herbs and spices that suit you best.
- The lemon juice or apple cider vinegar will help keep your spread nice and green but it is still a fresh product and should be used within a couple of days.
