Bean and Pasta Salad

This salad is full of flavour and is sure to be a hit at any summer picnic or potluck. Check out the French Dressing recipe that goes with this salad. It is very good!

Ingredients

Cooked kidney beans 1 cup
Cooked black beans 1 cup
Cooked chickpeas 1 cup
Cooked navy beans 1 cup
Veggie rotini (whole grain) 2 cups
Green pepper, chopped, bite sized pieces 1 ea
White onion, diced 1/2 cup
Fresh parsley, minced 1/4 cup
Fresh basil, minced 1 Tbsp
Fresh thyme, minced 1 Tbsp
French dressing to taste

Directions

  1. Cook veggie rotini according to package directions.
  2. If using canned beans, drain, rinse and drain again.
  3. In a salad bowl, combine beans, rotini, veggies, and fresh herbs.
  4. Add dressing to bean mixture. Stir gently.
  5. Cover and refrigerate for several hours to mix flavours.

Helpful Hints

  1. You may be able to find the beans in pre-mixed cans.
  2. For a quick mix option, use a pre-made French dressing instead of making your own.
  3. If you are making the dressing from scratch, you may wish to make extra and serve with a green salad.
  4. If you like parsley, increase to 3/4 cup. Make sure it is finely chopped.
  5. Garnish with chopped green onions just prior to serving.
