Beet & Carrot Salad

This quick and easy salad is a great option for autumn or early spring. It would also be a lovely dish to serve on Valentine’s Day.
Ingredients
Carrots, grated | 1 3/4 cups | |
Beets, grated raw | 1 1/2 cups | |
Lime juice | 1/4 cup | |
Soy sauce | 1 Tbsp |
Directions
- Toss ingredients together & serve.
This salad would be great not just for Christmas and Thanksgiving but also Valentine’s Day. You can change up the flavours a bit by adding raisins and chopped apple and by swapping the soy sauce for a raspberry vinaigrette. To keep the apple pieces from turning brown dip them in the lime juice. Use a pink tablecloth with lace overlay (like the one in the photo) and add some red taper candles!
