Broccoli Salad

This salad is a tasty way to add a green vegetable to your family meal. Also works well for pot lucks. This recipe comes from Kraft Canada (hence the Miracle Whip ingredient). Feel free to use another brand if thatβs what you prefer. You could also use home made mayo. This recipe calls for raisins but cranberries would also work well, especially if serving at a holiday gathering.
Ingredients
Miracle Whip Original Spread or equivalent | 1/2 cup | |
Sugar | 1/3 cup | |
Distilled white vinegar | 2 Tbsp | |
Broccoli florets | 12 cups | |
Red onion, finely chopped and cooked | 1 small | |
Raisins | 1/2 cup | |
Sunflower seeds- optional | 1/4 cups | |
Bacon, cooked & crumbled | 5 slices |
Directions
- Mix Miracle Whip, sugar and vinegar.
- Combine broccoli, onion, raisins and sunflower seeds in large bowl. Add Miracle Whip mixture; toss to coat.
- Refrigerate several hours. Sprinkle with bacon before serving.
Notes
I made few changes to the original recipe:
- Some of my family members can’t tolerated raw onion so I changed that ingredient to cooked onion.
- I used mayonnaise instead of Miracle Whip.
- I omitted the sunflower seeds as I did not have any on hand but I think they would be good in it.
- The sugar content is a bit high. I cut it down to from 1/2 cup to 1/3 cup . . . but it could be cut down even further, especially since the recipe includes raisins which add sweetness.
I tagged this recipe as “Christmas” because of the optional cranberries and the fact that as a vegetable dish it would appeal to a wide variety of people. However, it is a great dish to make year round including summer picnics.
This recipe can easily be made meat-free by using veggie bacon in place of regular bacon (or soy-based bacon bits if that’s your preference). For reduced sugar diets try stevia in place of all or part of the sugar.
This is a Kraft recipe but you do not have to use Miracle Whip. You can use any mayonnaise you like whether home made or store purchased. Chosen Foods makes a good mayo using avocado oil. It’s a bit pricey but if you can afford it . . . it’s a very healthy alternative.
