Cheese Toss on a Bun

If you’re tired of ordinary cheese sandwiches try this zesty option with tomatoes, herbs and sprouts! A great option for school lunches. Check out our article Vegetarian Lunch Box Ideas for more tips and recipes.

Ingredients

Finely grated cheese, or crumbled feta to taste
Chopped green onions to taste
Chopped parsley and basil to taste
Diced tomatoes to taste
Mustard, humus, miso or non-hydrogenated margarine as a spread to taste
Sprouts to taste
Multi-grain bun(s) as needed

Directions

  1. Toss together cheese, green onions, parsley, basil and tomatoes.
  2. Cut the buns in half and spread on the mustard (or your choice of spread).
  3. On one half put down some sprouts and then the cheese mix. Top it with more sprouts and cap it off with the other half of the bun.
