This coleslaw is something that I threw together one evening. I started with just the vegetables, vinegar, mayonnaise and pepper but felt that something was missing. The next day I added the rest of the ingredients. My husband was skeptical of this dish when he first saw it: a bright fuchsia salad with chunks of green. After tasting it he said it was very good and had a “nice combination of flavours”. This salad makes a nice side dish to any summer meal. It would also be a great dish to serve on the Christmas dinner table. Its bright colour would be quite festive, and ingredients such as apples, cabbage and raisins are good choices in the fall and winter.

All ingredients are to taste:

Ingredients

Red cabbage, finely grated
Carrots, finely grated
Red pepper, finely grated
Green pepper, chopped
Green apple
Raisins
White cheddar cheese, diced
Apple cider vinegar
Mayonnaise
Celery seed
Black pepper
Fresh garlic, minced (optional)
Powdered monk fruit sweetener (optional)

Directions

  1. Toss vegetables together and add a splash of apple cider vinegar.
  2. Add raisins, mayonnaise and seasonings.
  3. Set aside apple and cheese.
  4. Store in fridge until ready to serve.
  5. Just prior to serving, coarsely grate green apple and add to the coleslaw along with the white cheddar.

Helpful Hints

  1. Grating the apple just prior to serving helps keep it from turning brown. You can also toss it with a little lemon juice to preserve freshness.
  2. Adding the cheese just prior to serving helps keep it from becoming slimy.
  3. Expect the cheese to take on the fuchsia colour of the vegetable mixture.
