Cream Cheese Icing

This recipe is a basic frosting that I use for carrot cake. Makes about 2 cups.

Ingredients

Cream cheese 8 oz pkg
Icing sugar 2 cups (or to taste)
Vanilla 1/2 tsp

Directions

  1. Beat cream cheese and vanilla in electric mixer.
  2. Add icing sugar until mixture reaches consistency of icing (about 2 cups).
  3. Frost cake.

  • Those wishing to reduce the sugar in this recipe could try replacing one cup with a few drops of liquid stevia extract. The number of drops will depend on the potency of the stevia. Check the label for its sweetness equivalency to sugar.
