Cream Cheese Icing

This recipe is a basic frosting that I use for carrot cake. Makes about 2 cups.
Ingredients
Cream cheese | 8 oz pkg | |
Icing sugar | 2 cups (or to taste) | |
Vanilla | 1/2 tsp |
Directions
- Beat cream cheese and vanilla in electric mixer.
- Add icing sugar until mixture reaches consistency of icing (about 2 cups).
- Frost cake.
Those wishing to reduce the sugar in this recipe could try replacing one cup with a few drops of liquid stevia extract. The number of drops will depend on the potency of the stevia. Check the label for its sweetness equivalency to sugar.
