Fruit & Nut Balls

These yummy and healthy treats are great for school lunches or an afternoon snack.
Ingredients
Dates, pitted | 1/2 cup | |
Raisins, dark or golden | 1/2 cup | |
Cocoa -or- carob powder | 2 Tbsp | |
Honey | 2 Tbsp | |
Walnuts | 1/2 cup | |
Sunflower seeds | 1/2 cup |
Additional ingredients: extra walnuts, ground; OR shredded coconut, unsweetened.
Directions
- Grind together dates, raisins, cocoa (or carob) powder, honey, walnuts and sunflower seeds in a food processor.
- Press the mixture into 24 small balls.
- Roll in the ground nuts or shredded coconut. Store in an airtight container.
