Fruit Sweet Oatmeal Cookies

These cookies have a wonderful flavour. Orange juice complements the prunes quite nicely, but use whatever juice concentrate you like.

Ingredients

Tightly packed pitted prunes 1/2 cup
Unsalted butter, room temperature 2 Tbsp
Oil 2 Tbsp
Fruit Juice Concentrate 1 1/2 cups
Vanilla extract 1 tsp
Whole wheat pastry flour 2 1/4 - 2 1/2 cups
Rolled oats 1 cup
Baking soda 1 tsp
Salt 1/2 tsp

Directions

  1. Preheat oven to 350.
  2. Spray 2 baking sheets with nonstick cooking spray or line with parchment paper.
  3. In a food processor, combine prunes with 1/4 cup warm water. Process until smooth.
  4. Transfer puréed prunes to a large bowl. Whisk in butter and oil until smooth. Gradually whisk in fruit-juice concentrate and vanilla.
  5. In a small bowl, stir together 2 1/4 cups flour, rolled oats, baking soda and salt.
  6. Add the flour mixture to the prune mixture and mix with a wooden spoon until blended.
  7. If you find your batter a bit too thin, add another 1/4 cup flour.
  8. Drop by rounded tablespoonfuls onto the prepared baking sheets, spacing the cookies about 1 1/2 inches apart.
  9. Bake one sheet at a time for 12 to 15 minutes, or until lightly browned.
  10. Transfer cookies to racks and let cool.
