Grilled Chicken Salad

“Very tasty dinner salad with the onions and red pepper adding a delightful colour balance to the greens and white/buff chicken colour. Salad prep. time including chicken is less than 25 minutes. I used Annie’s Organic Green Garlic Dressing

Ingredients

Grilled chicken breasts (boneless, skinless) 2 ea
Romaine lettuce 1 medium head
Swiss chard 2 leaves
Spinach 1 handful
Spanish onion, sliced 1/2 ea large
Red pepper, chopped 1 ea medium
Walnut pieces or pumpkin seeds to taste
Salad dressing, your choice to taste

Directions

  1. Cut chicken breasts into thin strips.
  2. Tear lettuce, chard and spinach into bite-sized pieces.
  3. Arrange vegetables on top of greens.
  4. Add chicken strips and sprinkle with walnut pieces or pumpkin seeds.
  5. Add dressing to taste.
