Grilled Chicken Salad

“Very tasty dinner salad with the onions and red pepper adding a delightful colour balance to the greens and white/buff chicken colour. Salad prep. time including chicken is less than 25 minutes. I used Annie’s Organic Green Garlic Dressing

Ingredients
Grilled chicken breasts (boneless, skinless) | 2 ea | |
Romaine lettuce | 1 medium head | |
Swiss chard | 2 leaves | |
Spinach | 1 handful | |
Spanish onion, sliced | 1/2 ea large | |
Red pepper, chopped | 1 ea medium | |
Walnut pieces or pumpkin seeds | to taste | |
Salad dressing, your choice | to taste |
Directions
- Cut chicken breasts into thin strips.
- Tear lettuce, chard and spinach into bite-sized pieces.
- Arrange vegetables on top of greens.
- Add chicken strips and sprinkle with walnut pieces or pumpkin seeds.
- Add dressing to taste.
