Hearty Cabbage Stew

A hearty, tasty stew chock full of veggies for cold winter evenings. Freezes well. Β Can be adapted for a plant-based diet. Folks on a Paleo diet should serve without the bread (or use a Paleo style bread).
Ingredients
| Lean ground beef | 1 lb. | |
| Onion | 1 med. | |
| Diced celery | 1/2 cup | |
| Diced green pepper | 1/2 cup | |
| Oil | 2 Tbsp. | |
| Sugar or substitute | 2 Tbsp. | |
| Pepper | 1/4 tsp. | |
| Paprika | 1/2 tsp. | |
| Tomato paste | 11 oz. can | |
| Canned tomatoes | 28 oz. | |
| Hot water | 4 cups | |
| Beef bouillon cubes | 2 or more | |
| Chopped fresh or dried parsley | 3 Tbsp. or 3 tsp. | |
| Raw diced potato | 2 cups | |
| Raw diced carrot | 1 cup | |
| Chopped cabbage | 1 med. |
Directions
- In a very large soup pot, sautΓ© in oil the beef, onion, celery, & green pepper till redness is gone from meat.
- Add remaining ingredients except cabbage & combine thoroughly.
- Simmer one hour stirring occasionally.
- Add cabbage & simmer one hour longer.
