Hold-the-Sugar Apple Pie

This tasty pie is sweetened only with apple juice. It calls for a pre-baked crust that you can either make yourself or buy from a store. Makes six servings.

Ingredients

Frozen apple juice concentrate, thawed 12 oz
Cornstarch 3 Tbsp
Cinnamon 1 tsp
Allspice 1/4 tsp
Nutmeg 1/4 tsp
Butter or non-hydrogenated margarine 2 Tbsp
Baking apples (Pippin, Rome or Granny Smith) 6 large
9-inch pie shell, baked 1 ea
Whipped cream (optional) to taste
Nuts (optional) to taste

Directions

  1. Peel, core and thinly slice apples.
  2. Measure about 1/4 cup concentrate into small bowl; stir in cornstarch and spices.
  3. Place the remainder of the concentrate into a large skillet with the apples. Simmer gently until apples are just tender.
  4. Lightly stir in cornstarch mixture until quite thick. Stir in butter.
  5. Pour into pre-baked pie shell.
  6. Serve with whipped cream and nuts (if using).

Helpful Hints

  1. Let pie cool a bit before adding whipped cream
  2. Tart shells may be substituted for the pie shell.
  3. To make this a gluten-free pie, select a crust made from appropriate grains.
