Hold-the-Sugar Apple Pie

This tasty pie is sweetened only with apple juice. It calls for a pre-baked crust that you can either make yourself or buy from a store. Makes six servings.
Ingredients
Frozen apple juice concentrate, thawed | 12 oz | |
Cornstarch | 3 Tbsp | |
Cinnamon | 1 tsp | |
Allspice | 1/4 tsp | |
Nutmeg | 1/4 tsp | |
Butter or non-hydrogenated margarine | 2 Tbsp | |
Baking apples (Pippin, Rome or Granny Smith) | 6 large | |
9-inch pie shell, baked | 1 ea | |
Whipped cream (optional) | to taste | |
Nuts (optional) | to taste |
Directions
- Peel, core and thinly slice apples.
- Measure about 1/4 cup concentrate into small bowl; stir in cornstarch and spices.
- Place the remainder of the concentrate into a large skillet with the apples. Simmer gently until apples are just tender.
- Lightly stir in cornstarch mixture until quite thick. Stir in butter.
- Pour into pre-baked pie shell.
- Serve with whipped cream and nuts (if using).
Helpful Hints
- Let pie cool a bit before adding whipped cream
- Tart shells may be substituted for the pie shell.
- To make this a gluten-free pie, select a crust made from appropriate grains.
